Kitoza, a Malagasy traditional food made ​​from beef or pork.

This guide was developed within the framework of the European research project AFTER (African Food Tradition rEvisited by Research). It aims to help you to optimize your processes fabrication. On the basis of obtained search results, this guide covers the processing steps required to manufacture Kitoza and proposes several improvements :

  • Standardize the manufacturing process in order to offer consumers a stable product
  • Ensure optimal health and nutritional quality
  • Limit the content of Polycyclic Aromatic Hydrocarbons (PAHs) in accordance with European requirements
